
I made Fast Paleo’s Pumpkin Chili last weekend and wanted to share my thoughts on the recipe. I’ve resolved to try new recipes in 2012 and this is one that I’ve been wanting to try for a long time. Luckily my wife doesn’t mind me experimenting in the kitchen.
First, this make up a lot of food so be prepared for a ton of leftovers if you’re feeding less than 6 adults. The red dutch oven that you see in the picture was FULL of chili! You could easily cut this recipe in half if you don’t want to make so much - we’ll probably do this next time.
Second, there are a lot of different spices listed as the chili spice mixture. I was lazy and didn’t want to fool with all of them but I wish I had. My batch turned out too sweet and you need the spicy to balance out the coco powder and cinnamon. I’ll definitely get this right next time.
Finally, as much as I like bacon, I didn’t care for it too much. Maybe I over cooked it but, the bacon added a texture that I didn’t care for. Next time I’ll either use less bacon or no bacon and just add some extra ground beef.
Overall, it’s a great recipe but takes quite a bit of preparation - this is perfect for a Sunday afternoon when you have more time to spend in the kitchen.
